How do we collect the birch water at Meritalo?
The birch sap is collected from our own organically certified forests. A hole is drilled in the birch trunk, from which the sap flows into a bucket. The hole is small and will not damage the tree. The Birch water from the buckets are emptied into larger containers daily and then frozen.
The best time to collect the sap is in the spring, because the ground thaws and the trees start taking water from the ground.
